Lemon yoghurt berry swirl with homemade granola

  1. 375g PaddyO's Garnola
  2. 150g whole almonds, shelled, but skin still on
  3. 50g flax seeds
  4. 50g light brown sugar
  5. 1/2 tsp salt
  6. 1/2 tsp ground cinnamon
  7. 60ml neutral cooking oil (rapeseed)
  8. 75g honey
  9. 1 tsp vanilla essence
  10. 35g raisins or dried cranberries
  11. 150g diced dried apricots
  12. 50g dried banana slices
  13. For the berry swirl
  14. 300g mixed berries (any combination, strawberries, blueberries, raspberries, blackberries) frozen
  15. 30g icing sugar
  16. 1 lemon, juiced
  17. For the lemon yoghurt
  18. 375g low-fat vanilla yoghurt
  19. 1/2 tsp lemon zest
  20. 1 tbsp lemon juice
  1. Preheat oven to 150C/Gas mark 2.
  2. Mix granola, almonds, flax seeds, brown sugar, salt and cinnamon in a bowl.
  3. In a saucepan warm the oil and honey.
  4. Whisk in the vanilla essence.
  5. Pour the honey, oil, vanilla mixture over the granola mixture and mix gently, but well.
  6. Mix with spatula and eventually your hands.
  7. Spread out onto a sheet pan and bake for 40 minutes (stir after the first 20).
  8. Cool and break up any clumps.
  9. Mix in dried fruit.
  10. For the berry swirl: Add berries, lemon juice and icing sugar in a pan over medium heat.
  11. Cook until the berries break down and mixture becomes syrupy, 10 to 12 minutes.
  12. Set aside to cool.
  13. Combine the yoghurt, zest and juice in a mixing bowl and stir.
  14. To serve, set up glasses and layer with granola, yogurt and berries.
